HIGH PROTEIN YOGURT PARFAIT WITH DRIED FIGS, BERRIES AND NUTS

There is something so satisfying about a gorgeous parfait. The issue is that most are made with a yogurt that contains a ridiculous amount of sugar. No thanks.
So listen up…all you need to change to have a healthy parfait is make sure you are using a low sugar yogurt or coconut yogurt (my fav choice). Then a scoop of a healthy protein powder for even more protein (but this can be optional). Greek yogurt has the highest protein content.
Then you can add all sorts of healthy ingredients like fruit (fiber, antioxidants) and nuts (healthy omegas and protein).
This recipe was a staple during pregnancy and nursing. It hit the spot every time and provided nutrient dense ingredients with the right "good" energy.
This is fantastic to make ahead and then enjoy for a dream breakfast or snack or even dessert. Enjoy!

Ingredients
  

  • 1 cup yogurt of choice - I use unsweetened greek yogurt or unsweetened vanilla coconut yogurt
  • 1 scoop of a vanilla protein powder this step is optional
  • 2-3 tbsp of organic blackberries
  • 2-3 tbsp of organic raspberries
  • 2-3 dried figs cut in slices
  • 2 tbsp of cashews
  • 2 tbsp of pumpkin seeds
  • 1 tsp of warm raw honey drizzle for topping (optional)

Instructions
 

  • Mix the yogurt with 1 scoop of protein powder (if using).
  • In a small glass (clear glasses are so pretty) start to make your layers for the parfait. Start with a few pieces of each fruit, then sprinkle both nuts and seeds, followed by yogurt mixture.
  • Now repeat the process until you end with yogurt on the top. For topping, put a few pieces of everything over and a nice drizzle of honey if desired. Enjoy!
