
HIGH PROTEIN YOGURT PARFAIT WITH DRIED FIGS, BERRIES AND NUTS
Ingredients
- 1 cup yogurt of choice - I use unsweetened greek yogurt or unsweetened vanilla coconut yogurt
- 1 scoop of a vanilla protein powder this step is optional
- 2-3 tbsp of organic blackberries
- 2-3 tbsp of organic raspberries
- 2-3 dried figs cut in slices
- 2 tbsp of cashews
- 2 tbsp of pumpkin seeds
- 1 tsp of warm raw honey drizzle for topping (optional)
Instructions
- Mix the yogurt with 1 scoop of protein powder (if using).
- In a small glass (clear glasses are so pretty) start to make your layers for the parfait. Start with a few pieces of each fruit, then sprinkle both nuts and seeds, followed by yogurt mixture.
- Now repeat the process until you end with yogurt on the top. For topping, put a few pieces of everything over and a nice drizzle of honey if desired. Enjoy!
