HEALTHY PUMPKIN SPICE MUFFINS

Healthy Pumpkin Spice Muffins! Tis' the season for pumpkin and today happens to also be my birthday so... let's celebrate.
Lower carb, low sugar, all natural and gluten free.
You'll love these low sugar, all natural muffins loaded with protein and that pumpkin spice flavor we all love. Feel free to add your favorite toppings.
Your house will also smell amazing, that's a promise. Great for the entire family. Enjoy!

Ingredients
  

  • 3 eggs
  • 1 cup of pumpkin
  • 1 banana
  • 1/4 cup unsweetened almond milk
  • 1 tsp pure vanilla extract
  • 3/4 cup of almond flour
  • 1/4 cup coconut flour
  • 1 scoop of vanilla protein powder
  • 2 tbsp pumpkin pie spice
  • 1 tsp of baking soda
  • 11/2 tsp of baking powder
  • 1/2 tsp Himalayan salt
  • Toppings: chocolate chips pecans, whipped topping (all optional)

Instructions
 

  • Preheat oven to 350 F. Spray a muffin tin with cooking spray.
  • Mix the wet ingredients in a food processor. In a separate bowl; whisk together all the dry ingredients. Next add the dry ingredients to the wet and slowly incorporate. Mix well.
  • Next add toppings of choice and place batter in muffin tins. Bake 17-22 mins. So good!
