
HEALTHY PUMPKIN SPICE MUFFINS
Ingredients
- 3 eggs
- 1 cup of pumpkin
- 1 banana
- 1/4 cup unsweetened almond milk
- 1 tsp pure vanilla extract
- 3/4 cup of almond flour
- 1/4 cup coconut flour
- 1 scoop of vanilla protein powder
- 2 tbsp pumpkin pie spice
- 1 tsp of baking soda
- 11/2 tsp of baking powder
- 1/2 tsp Himalayan salt
- Toppings: chocolate chips pecans, whipped topping (all optional)
Instructions
- Preheat oven to 350 F. Spray a muffin tin with cooking spray.
- Mix the wet ingredients in a food processor. In a separate bowl; whisk together all the dry ingredients. Next add the dry ingredients to the wet and slowly incorporate. Mix well.
- Next add toppings of choice and place batter in muffin tins. Bake 17-22 mins. So good!
