Chocolate Chip Protein Muffins

CHOCOLATE CHIP PROTEIN MUFFINS

What's not to love about an actual healthier muffin that's packed with protein and chocolate chips!
Add in any other toppings you like and you'll love the texture too.
We love having these on hand and I even pack them for Asher's lunch knowing he gets a yummy treat that's low in sugar and with a good source of protein & healthy fat. Enjoy!

Ingredients
  

  • 1 cup mashed banana
  • 3 large eggs
  • 2 Tbs raw honey
  • 1 cup nut butter we like sunflower seed butter but any is great
  • 2 Tbs milk of choice
  • 1 tsp pure vanilla extract
  • 1/2 cup powder chocolate
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup chocolate chips I us

Instructions
 

  • Preheat oven to 350°F. Prepare muffin tin with cooking spray.
  • In a food processor/blender add all ingredients (except the chocolate chips) and blend on high, about 1 minute. Stir in chocolate chips or/any other toppings.
  • Fill each muffin 3/4 full with the muffin batter. Top each muffin with extra chocolate chips. Bake for 15-18 mins, or until the tops are set and a toothpick comes out clean.
  • Cool for 10 mins and enjoy!
