PUMPKIN PIE FUDGE BITES

Pumpkin Pie Fudge Bites! These are a must try and a very healthy swap for this Thanksgiving.
Satisfaction is the first word my husband said. Just 4 ingredients, not too sweet with just the right hit of pumpkin flavor.
I like some with chocolate chips, some with whipped cream and some plain. All delicious yet so indulgent plus easily portioned out.
All healthy fats, great for blood sugar balance and kid friendly (says Asher!). I'm making them again with crushed up ginger snap cookies. Enjoy!

Ingredients
  

  • 1/2 cup pumpkin purée
  • 1/2 cup almond butter
  • 1/2 cup coconut oil
  • 1/4 cup pure maple syrup
  • 1/2 tsp pumpkin pie spice
  • chocolate chips or any other favorite toppings all optional

Instructions
 

  • Add all ingredients (except toppings) to a pan over low/ medium heat for about 3-5 minutes or until well combined. Make sure to stir often to avoid burning.
  • Once combined, pour into silicone cup molds (or can use glass container lined with parchment paper). Add any favorite toppings now. Freeze for at least 4-5 hours.
  • Thaw before eating & enjoy! Great frozen or defrosted. Don’t forget the whipped cream.
