SUNFLOWER BUTTER BANANA OAT CAKE

Pretty much you should stop what you're doing and just whip this "cake-like" goodness up! It's super easy and loved by all. Even our lil' dude can enjoy some in handfuls. I like to slather more pb over it too.
Gluten free, no refined flour or sugars and all natural ingredients. Yes, still delicious.
Yes you can have your cake and eat it too.

Ingredients
  

  • 1 very ripe banana medium
  • 2 eggs large
  • 1/3 cup sunflower butter or can use peanut butter crunchy or creamy
  • 1 tsp pure vanilla extract
  • 2 tbs raw honey or maple syrup
  • 1/2 cup unsweetened almond milk
  • Dry
  • 1.5 cups gf rolled oats
  • 1/4 cup almond flour or any kind of flour
  • 1 tsp baking powder
  • pinch of salt I also add a hit of cinnamon but can be optional

Instructions
 

  • Preheat oven to 375°F and spray a medium-size baking dish or cake pan with coconut oil cooking spray. In a large bowl, mash banana well. Then, add in eggs, peanut butter, vanilla extract, honey (or maple syrup), and almond milk and mix until smooth.
  • Add rolled oats, flour, baking powder, and salt (& cinnamon if using), and mix until everything is thoroughly combined.
  • Transfer batter into baking dish and slice a few bananas on top.
  • Bake at 375° for about 30-40 minutes (it will depend on the size and depth of your baking dish) or until firm. Enjoy!
