HOMEMADE ENERGY BARS

These are great for those busy days and the entire household will appreciate them. Perfect during pregnancy, nursing and postpartum. They are also great for an on-the-go snack.
Packed with only good for you ingredients which is very rare in traditional granola & cereal bars.
You can make a few swaps too with some of your favorite ingredients. Enjoy!

Ingredients
  

  • 1 cup pumpkin seeds
  • 1 cup almonds
  • 1 cup gf oats
  • 3/4 cup protein powder
  • 1/2 cup finely shredded unsweetened coconut
  • 1/2 cup coconut oil
  • 1/4-1/2 cup raw honey depending on your level of sweet
  • 2 eggs
  • 1/3 cup almond butter or peanut butter
  • 1/3 cup cacao nibs or chocolate chips
  • 2 tsp cinnamon
  • 1/3 cup goji berries

Instructions
 

  • Preheat the oven to 325 F. Grease a 9 inch square cake pan.
  • Line base with parchment paper extending over the edges.
  • Process the pumpkin seeds, nuts, oats, protein powder, coconut, coconut oil, honey, eggs, nut butter, cacao nibs and cinnamon until well combined. Stir in berries.
  • Press deeply into the pan; sprinkle with extra toppings: pumpkin seeds, cacao nibs, coconut. Bake 30 mins or until golden brown. To avoid any burning you may need to add foil toward the end, keep your eyes on them. Cool and then cut into bars. Can store in the freezer and pull them out as needed for up to 2-3 months. Enjoy!
