HEALTHY AND EASY CHOCOLATE MUG CAKE

This is my healthy and very moist chocolate mug cake. Not only does it hit the spot and then some but it takes 5 mins tops for that first warm bite. Yes, that is correct, you make it in a mug.
I use coconut flour but you can use any flour you want but my cake is seriously quite healthy and also low in sugar. I love cacao nibs and seem to add them to just about anything I can – but they are optional if you do not have them. They add little chocolate crunches so I am in love but they are also packed with magnesium, iron, and more antioxidant levels then dark chocolate.

Ingredients
  

  • 1 tbsp coconut flour any flour works but coconut is what I use
  • 1 tbsp cocoa powder
  • 1/4 tsp baking soda
  • pinch of salt
  • 1 organic egg
  • 1/2 tbsp applesauce if you do not have this you can use 1 full tbsp of honey
  • 1/2 tbsp raw honey use more if you like it more sweet
  • 1/4 tsp pure vanilla extract
  • 3 tbs of almond milk or milk of choice
  • 1/2 tbsp cacao nibs can be optional
  • Sprinkle chocolate chips or anything you want. I use a combo of peanut butter baking chips and chocolate chips, Lily’s
  • Optional Toppings; whipped cream ice cream, nut butter, nuts, sprinkles, etc.

Instructions
 

  • In a bowl mix all the dry ingredients. Next add in all the wet ingredients and incorporate well. Add in the cacao nibs if using and chocolate chips and peanut butter chips – if using.
  • Spray a mug with cooking spray. Pour in the mixture.
  • Microwave for 1 1/2 mins.
  • Enjoy now or top with anything you like. Whipped cream, ice cream, or nut butters are all great choices. Enjoy!
