DOUBLE – TOMATO SOUP

I am all about warm, soothing, comfort foods. This is my favorite tomato soup recipe of all time and I hope you enjoy it too. I omit heavy cream but you can certainly add a few tbs at the end if you are after that creamy tomato soup.
So what do I mean by DOUBLE-Tomato? Simple. That is sun-dried tomato and diced tomatoes mixed together.
I know, I know…and with a hit of fresh basil, it is a dream!
Besides tasting so good, it also is still so healthy and good for you too. The carrots give it a little sweetness and the onions really create the texture. Great anytime of the year. Pair it up with a protein dish or a favorite warm sandwich and you are good to go. I like to garnish with fresh basil or even parsley sometimes. Enjoy!

Ingredients
  

  • 1 tablespoon butter
  • 1 cup chopped onion 1 medium
  • ¾ cup shredded carrot
  • 1 tablespoon minced garlic
  • 1 tablespoon minced shallots
  • ¼ teaspoon freshly ground black pepper
  • teaspoon salt
  • 10 large basil leaves divided
  • 3 drained sun-dried tomato halves packed in oil with herbs (such as California Sun Dry brand)
  • 2 14.5-ounce cans organic diced tomatoes, undrained
  • 1 14-ounce can fat-free, less-sodium chicken broth (or can use bone broth)

Notes

Use veggie broth to make vegetarian or vegan. In addition, swap the butter for olive oil.
