Figs. Not only do they rock your taste buds, jazz up any meal savory or sweet, but they are super amazing for you. Plus, they come in many different varieties which I love so you never get bored. Now use your favorite dark chocolate and make my adorable fig kisses!Fig Facts: They are low in calories; around 70-100, high in soluble dietary fiber, and loaded with minerals and vitamins-depending on the color, this varies. They are also great to make jams with. July through late August is the prime season for Figs, they come in a ton of varieties but below are the top 5 to know of:Brown Turkey Figs: has brownish/copper-colored skin, often with hints of purple, and mostly pink/red flesh with some white flesh.Celeste Figs: about the size of an egg, a purplish-brown when ripe, and a dark, sweet, moist, purple flesh inside.The Calimyrna Fig: Is known for its nut-like flavor and golden skin. This type is commonly eaten as is and is what I usually use for this recipe.The Mission Fig: This fig is a deep purple which darkens to a rich black when dried. Often called “black mission figs”. Would also be GREAT for this recipe.The Kadota Fig: is thick-skinned with a creamy amber color when ripe. Practically seedless, this fig is often canned and dried. Try them all and enjoy all season long!
5-6organic figscleaned – I like to use Calimyrna Figs or Black Mission Figs for this recipe
1/2of a good quality 3 oz organic chocolate bar70% or higher – the better, I like Lily’s, chopped
Instructions
Take about one half (not the whole bar-unless you are making about a dozen) of the chocolate bar and break or chop into small pieces. Place a double boiler pan (or a saucepan filled with 1-2 inches of water with a glass/metal bowl over the top) over low heat. (Or you can microwave). Do not overheat the chocolate. Melt the chocolate just until it is smooth. Let cool slightly for a few minutes.
Place a clean and completely dry fig in the slightly cooled chocolate. I like to use a spoon to help coat this. Place on parchment paper on a flat plate or jelly-roll pan. Repeat the process. Then put in the fridge for at least 15-30 mins until set and dried.
Then they are ready. Enjoy!
