
CHOCOLATE PROTEIN BROWNIE MUFFINS
Ingredients
- 1 cup cashew butter or can use almond butter or sunflower seed butter. *The more drippy the better for texture
- 3 eggs
- 2 scoops chocolate collagen powder or protein powder. If you don't have can use just cacao powder
- 1/3 cup sugar sub I like alluose or monk fruit
- 1-2 tbsp cacao powder I like dark like Wild Cocoa Powder
- 1/2 tsp baking powder
- tiny hit of sea salt
- 1/4-1/3 cup @lilys_sweets chocolate chips
Instructions
- Preheat oven to 350 F. Mix everything in a bowl until well combined. This is a very thick batter. Spoon info 9 muffin tins or you could make them into mini muffins too.
- Bake 15-17 mins. If you want them more gooey in the inside, keep your eye on them and check at 15 mins. If you want them more cake like then bake around 17 mins or longer. Enjoy!
